Quick-And-Easy Pizzas for Lunch or Brunch  

Pizza is a favorite choice of many. Although it is offered on the menus of pizza parlors across the country - and virtually across the globe – it can be made at home for a quick-and-easy addition to your lunch or brunch. Here are some simple and easy, yet tasty and delicious, pizzas you can try.

Athenian Pizza

Ten minutes is all it takes to make a deliciously different Athenian Pizza. Sliced pita breads are used for the crust. They are first spread with spaghetti sauce, then topped with a mixture of sautéed eggplant and sweet red bell pepper, then pepperoni and onion slices and baked for about five minutes or until heated through.

Artichoke Spinach and Lemon Pizza

Artichoke Spinach and Lemon Pizza may sound exotic and difficult to make, but in fact, it takes less than ten minutes to assemble the ingredients. Start with a pre-made pizza dough crust. Sautee some spinach leaves in hot olive oil. Spread tomato puree on the pizza dough. Add the cooked spinach, then some chopped artichoke hearts and mozzarella cheese. Bake for about twenty minutes or until the crust is crisp and golden and the cheese is melted. Sprinkle the top of the pizza with freshly grated lemon zest before serving.

Bubble-up Pizza

Buttermilk biscuits are used for the crust of Bubble-Up Pizza. The uncooked biscuit dough is smashed flat and then covered with spaghetti sauce, cheese, garlic, onion, mushrooms, and olives and baked until the cheese is hot and bubbly. Simple, quick and tasty.

Cheesey Green Garden Pizza

Cheese Green Garden Pizza is prepared with a pre-made pizza crust. Broccoli and Swiss chard are cooked and then spread on top of the crust, along with some pesto and low fat cheddar cheese. The result is baked for about 10 minutes or until the cheese is hot and melted.

Kids Pizza Muffins

Kids Pizza Muffins utilizes English muffins as their base. The muffins are topped with tomato sauce, mushrooms, pepperoni, black olives and cheese and then cooked in the microwave until the cheese melts.
